Method

  1. To Make The Dressing: Whisk all the ingredients together in a medium[size bowl. Store in an airtight container in the fridge. The dressing will keep up to 5 days.
  2. To Assemble The Wraps: Top each wrap with 11 g baby romaine, 11 g baby arugula, 39 g watermelon balls, 16 g chopped pistachios, 1 1/2 tsp chopped mint. Add at least 2 tbs (30 ml) dressing on top or more if desired. Wrap tightly and serve.
