Method

  1. Clean and sanitize the work station.
  2. Ready all ingredients and their measurements.
  3. Pre-heat the oven to 220C.
  4. Pour the olive oil into an ovenproof dish or casserole and let it heat in the oven for 5-10mins.
  5. Take the dish out of the oven and carefully add the diced aubergine to the hot oil.
  6. Season with salt, pepper, and diluted (in 5g of water) rose harissa and toss everything together.
  7. Return the dish to the oven and cook for 30mins stirring halfway to prevent sticking to the bottom
  8. Take the dish out of the oven and stir in the cherry tomatoes to prevent sticking to the bottom.
  9. Return the dish to the oven and roast for 20mins.
  10. Take the dish out of the oven and stir in the drained chickpeas.
  11. Return the dish to the oven and roast for a final 10mins.
  12. Remove the dish out of the oven and stir in the grated lemon zest.
  13. Adjust the seasoning and let cool for 15mins.
  14. Drizzle with a generous amount of tahini dressing (tahini diluted with lemon juice) and scatter mint leaves before serving.
